When you're installing Windows 7 from a CD, you'll have to choose between using it as a live CD (if that's what you want) or an install (if that's what you want). You can use a non-Windows OS in your machine, but you'll lose out on the Windows 7 goodies you get from a Windows OS. It's best to just make a clean-out of your old Windows machine (so that it will run more efficiently on your new Windows machine) and then install your new OS.
